    calamari rings

    deveined prawns
  • 200

    mussels (out of shell)
  • fish stock for poaching
  • 1
    head red lettuce
  • 1
    head green lettuce
  • fresh coriander
  • Dressing and marinade
  • 200
    ml
    extra-virgin olive oil
  • 50
    ml
    fresh lemon juice
  • 5
    ml
    chopped garlic
  • 5
    ml
    chopped fresh coriander
  • 1
    fresh chilli
  • 20
    ml
    chopped celery
  • 20
    ml
    chopped spring onion
 

Method

 
Poach the calamari, prawns and mussels in the fish stock until slightly undercooked. Drain and cool.

DRESSING AND MARINADE:
Combine the oil, lemon juice, garlic, coriander, chilli, celery and spring onion.
Mix seafoods together and pour the dressing over. Leave to marinate for about 1 hour before serving.
Wash and drain lettuce, arranging leaves in alternate colours on serving plates. Arrange seafood in centre of each plate and spoon over remaining dressing.
Sprinkle coriander over the top.
