Immune booster lunch box

    vegetable stock

    ground cinnamon
  • 200

    couscous
  • 50

    seedless raisins
  • 60
    g
    butter
  • 50
    g
    slivered almonds, toasted
  • 5
    ml
    sugar
  • 50
    ml
    freshly chopped coriander
  • 40
    ml
    orange juice
  • 1
    bunch spring onions, sliced
 

Method

15 minutes
 
For this lunchbox we are using all the immune boosting power of Vitamin C, E and A.

Booster salad
This couscous salad is packed with the power of Vitamin C and E with the added power of iron from the raisins. Make it as a lovely side salad for you main evening meal and keep the leftovers for a healthy lunchbox option the following day.

Bring stock to the boil in a saucepan. Add cinnamon and couscous. Cover saucepan with a lid and remove from the heat. Leave to steam for 10 minutes.
Then add remaining ingredients and stir to combine. Season to taste with salt and set aside to cool.

Vitamin E treat
For a sweet treat add these vitamin E rich almond yo-yo cookies.
