Iced strawberry soup

  • 250
    g
    fresh strawberries
  • 500
    ml
    rosé wine
  • 250
    ml
    strawberry yoghurt
  • 125
    ml
    cream
  • freshly ground black pepper and a pinch of sugar
 

Method

 
Rinse and halve the strawberries. Marinate them in the wine overnight. Pour into a saucepan the next day and simmer for 20 minutes until tender. Cool and chill. Purée the mixture, add the yoghurt and cream, and season to taste with black pepper and sugar. Serve cold with ice cubes.
