100.00 g milk chocolate — broken into squares
100.00 g chocolate — peppermint creams
150.00 ml milk
300.00 ml cream — thick
2.00 eggs — just the yolks
2.00 eggs

Method:

Place the chocolate, peppermint creams, milk and cream in a saucepan and heat slowly while stirring continuously until the chocolate has melted. Alternatively, melt in a glass bowl in the microwave oven. Set aside.
Whisk the egg yolks and eggs together until creamy. Slowly add the chocolate mixture while beating continuously. Pour into a dish and freeze, beating occasionally with a fork to break up the ice crystals. Freeze until hard. Serve with extra cream and a sprig of mint.
Serves 6.
