Ingredients (3)

1.00 Litres ice cream — vanilla
4.00 Litres ice cream
250.00 ml cream — fresh, whipped to stiff peaks

Method:

Spray a ring mould with non-stick spray. Defrost the vanilla ice cream slightly. Meanwhile spoon balls of the coloured ice cream onto a baking sheet and freeze again until hard. Beat the vanilla ice cream until soft. Spread a thin, even layer of the ice cream in the bottom of the prepared ring mould. Arrange a layer of the coloured ice cream balls on top of the vanilla layer. Repeat the layers, ending with a layer of vanilla ice cream. Freeze until set. Plunge the bottom of the ring mould into hot water and turn the ice cream out onto a serving platter. Decorate with whipped cream, if desired. Slice and serve.
Serves 6-8.
