Huevo rancheros (Fried eggs with spicy tomato sauce)

    oil
  • 1
    onion, chopped
  • 2
    cloves garlic, crushed
  • 2
    chillies, chopped
  • 1
    green pepper, cubed
  • 410
    g
    chopped tomatoes
  • 2
    ml
    ground cumin
  • 8
    large eggs
  • 4
    corn tortillas, to serve
  • 15
    ml
    freshly chopped coriander
 

Method

12 minutes
 
Heat 15 ml oil in a large saucepan. Sauté; the onion, garlic and chilli until soft. Add the green pepper, tomatoes and cumin and simmer for five minutes. Season with salt and freshly ground black pepper to taste. Set aside. Heat the remaining oil and fry the eggs. Warm the tortillas and place one on each serving plate. Top each with two eggs and spoon the tomato sauce around the eggs. Sprinkle with chopped coriander and serve immediately.
