Here's a useful idea for when the garlic crusher has gone missing. To make peeling garlic cloves easier, lightly press each clove with the widest part of your blade, then peel. Slice thinly and sprinkle with a good pinch of salt (this breaks down the garlic). Using the knife blade, work garlic and salt into a smooth paste. This is a great way to crush garlic for sauces and dressings, where a smooth paste is required.
