Hot winter fruit salad

    stoned dates
  • 125
    ml
    pitted prunes
  • 125
    ml
    dry figs
  • 30
    ml
    caramel brown sugar
  • 5
    ml
    finely grated orange rind
  • 65
    ml
    orange juice
  • 10
    ml
    mixed spice
 

Method

 
Drain apricot and pear syrup into a saucepan. Set fruit aside. Heat syrup and add dates, prunes, figs and caramel sugar. Simmer for 10 minutes. Remove from heat and stir in orange rind and juice. Cut pears into quarters and add with apricots. Bring to boil, then pour into a serving bowl. Serve warm with ice cream or custard.
