Hot chocolate with spice

  • 200
    g
    dark, butter chocolate
  • 60
    g
    fresh ginger, finely grated
  • 600
    ml
    cream
  • 25
    ml
    cocoa powder
  • 100
    ml
    Van der Hum liqueur
  • pinch of salt
  • ginger snaps and ice cream to serve
 

Method

 
Place the chocolate, ginger, cream and cocoa powder in a saucepan and heat slowly until the chocolate has melted and a thick sauce forms.
Stir in the liqueur and salt and serve hot in small porcelain cups or warmed martini glasses.
Place ginger snaps (or any long biscuit) inside or on the side of the cup.
Serve with a scoop of pistachio and vanilla ice cream.
