Hot potato salad

    potatoes, peeled and boiled until tender
  • oil
  • 2
    onions, finely chopped
  • 250
    g
    streaky bacon
  • SAUCE
  • 15
    ml
    butter
  • 15
    ml
    cornflour
  • 250
    ml
    milk
  • pinch salt
  • 100
    ml
    chutney
  • 30
    ml
    white vinegar
  • 25
    ml
    mayonnaise
  • 10
    ml
    apricot jam
 

Method

 
Slice the potatoes into chunks and place in a dish. Sauté the onion in a little oil until tender and add to the potatoes. Fry the bacon until done, chop finely and add to the potatoes. Melt the butter, stir in the cornflour and heat for about 1 minute. Add small quantities of the milk at a time, stirring until smooth. Heat while stirring continuously until the mixture comes to the boil and thickens slightly. Season with salt and pepper to taste. Remove from the heat and add the remaining sauce ingredients. Mix well. Pour over the potatoes and serve hot. Serves 4-6.
