Ingredients (12)

1.00 kg potatoes — boiled, peeled and cubed
2.00 onion — finely chopped
60.00 ml fresh chillies — 573
250.00 g tomatoes — peeled and chopped
250.00 g peas — cooked
200.00 g salami — thickly diced
8.00 eggs
2.00 red pepper — chopped
2.00 garlic — cloves, crushed
50.00 ml fresh basil — finely chopped
salt
black pepper — freshly ground

Method:

Sauté the onions in the olive oil until transparent.
Add the tomatoes, garlic and basil, and simmer for 20 minutes. Purée in the food processor.
Place all the ingredients, except the eggs, in an ovenproof dish. Adjust seasoning.
Break eggs into indentations in the mixture. Place in a preheated 220 ºC oven for 6 to 8 minutes, or until yolks are cooked sufficiently.
Delicious served with crusty bread for lunch.
