Hot potato bake

    potatoes, boiled, peeled and diced
  • 2
    onions, finely chopped
  • 60
    ml
    olive oil
  • 250
    g
    tomatoes, skinned and chopped
  • 250
    g
    peas, cooked
  • 200
    g
    salami, thickly diced
  • 8
    eggs
  • 2
    red peppers, diced
  • 2
    cloves garlic, crushed
  • 50
    ml
    finely chopped basil
  • salt
  • freshly ground black pepper
 

Method

 
Sauté the onions in the olive oil until transparent. Add the tomatoes, garlic and basil, and simmer for 20 minutes. Purée in the food processor. Place all the ingredients, except the eggs, in an ovenproof dish. Adjust seasoning. Break eggs into indentations in the mixture. Place in a preheated 220 ºC oven for 6 to 8 minutes, or until yolks are cooked sufficiently. Delicious served with crusty bread for lunch.
