Hot garlic soup

    garlic cloves, chopped
  • 2
    leeks, white parts only
  • 30
    ml
    olive oil
  • 1
    Litres
    vegetable stock
  • 4
    potatoes, cubed
  • 100
    ml
    cream (or more as needed)
  • chives
  • 100
    ml
    white wine
  • salt and pepper
 

Method

 
1. Fry the chopped garlic and leeks in oil. 2. Add the stock, potatoes, bay leaf and simmer until potato is soft. Remove the bay leaf and purée soup. 3. Add white wine and bring to the boil. Add the seasoning and cream, then reheat gently without boiling. 4. Scatter with snipped chives and serve with toasted croûtons.
