450.00 g flour — white bread
80.00 g butter — cold
10.00 g Superbake Instant Yeast
5.00 ml salt
10.00 ml cinnamon — ground
10.00 ml mixed spice — ground
50.00 g castor sugar
100.00 g mixed dried fruit
50.00 g apricots — dried, chopped
1.00 eggs — large, beaten
300.00 ml milk — warm
50.00 ml flour — cake
0.00 Goldcrest Pure Honey — or syrup

Method:

Sift the bread flour into a large bowl.

Rub in the butter with your fingertips until the mixture resembles coarse breadcrumbs.

Stir in the yeast, salt, spices, sugar and fruit.

Mix the egg and milk together and add gradually to form a stiff dough.

Turn out onto a lightly floured surface and knead the mixture well for 10 minutes. The kneading can also be done at a low speed in a food processor using the dough hook.

Divide the dough into 12 pieces and roll into balls.

Put them in a greased baking tin or on a greased baking tray. Cover lightly with a tea towel and set aside in a warm place to rise until doubled in size.

Mix the cake flour and 50 ml water together and use a piping bag to pipe a cross on top of each bun.

Bake in a preheated oven at 200 °C for 25 to 30 minutes until cooked through and golden.

Remove from the oven and brush with warm honey or syrup.

Enjoy warm or cold, plain or buttered.
