Hot cream of avocado soup with crisp smoked beef

Ingredients (9)

60.00 ml butter
80.00 ml cornflour
2.00 Litres stock — chicken
salt and freshly ground black pepper — to taste
2.00 avocado — mashed
65.00 ml wine — fruity white
125.00 ml cream
6.00 slices smoked beef — crisped
fresh coriander — sprigs

Method:

Melt butter in a saucepan. When hot and bubbly, stir in cornflour and continue to stir until mixture turns golden.
Gradually add chicken stock, whisking constantly to smooth away any little lumps. Sprinkle with salt and pepper.
Remove from stove. Add avocado purée, white wine and cream.
Reheat carefully, but do not allow to boil. Transfer to a heated soup tureen and sprinkle with crisped smoked beef.
To serve, ladle into heated soup plates and garnish with fresh coriander.
