Hot coconut pudding

    cake flour
  • 1

    salt
  • 3
    ml
    baking powder
  • 500
    ml
    coconut
  • 250
    ml
    milk
  • SYRUP
  • 250
    ml
    sugar
  • 250
    ml
    water
  • 125
    ml
    cream or evaporated milk
  • 5
    ml
    vanilla essence
 

Method

 
Preheat oven to 180 °C and grease a 30 x 16 cm ovenproof dish with butter.
Cream the butter and sugar well together and add the eggs one at a time.
Beat well after each addition.
Sift the flour, salt and baking powder together and add the coconut.
Add the dry ingredients, alternating with the milk, to the butter mixture.
Spoon into the prepared dish and bake for 35 minutes or until done.
Meanwhile prepare the syrup: heat the sugar and water and cream or evaporated milk to boiling point.
Simmer for 5 minutes.
Remove from heat, add vanilla essence and pour over the hot pudding when it comes out of the oven.
