Hot chocolate pudding with stewed apricots

    amaretto biscuits or sponge fingers

    dark chocolate
  • STEWED APRICOTS
  • 200
    ml
    water
  • 100
    g
    sugar
  • 2
    ml
    vanilla essence
  • 5
    ml
    ground cinnamon
  • 800
    g
    apricots
 

Method

 
1. Grease and flour 8 dariole moulds. Beat the egg yolks and sugar together until pale. Stir in the milk. 2. Sift together flour, baking powder and cocoa and fold into yolk mixture. Chop up the biscuits and chocolate and fold in. 3. Beat the egg whites and fold in. Half fill each dariole mould and bake in a preheated 180 ºC oven for 10 minutes. STEWED APRICOTS 4. Cut apricots in half, remove the stone and wash. Bring water, sugar, vanilla essence and cinnamon to boil. Add the apricots and bring back to boil. Remove pan from heat and leave them in the syrup to cool. 5. Arrange apricots on a plate with the chocolate pudding and garnish with cherries, chocolate and vanilla sauce. Serves 8.
