Hot chicken pita

Ingredients

  • 1
    packet of 4 chicken breasts
  • 1
    onion
  • 1
    red pepper
  • 1/2
    punnet of baby marrows
  • 1
    tin of chopped tomatoes
  • 1
    handful
    basil
  • 1/2
    cup
    rice
  • 4
    pita breads
  • 4
    cloves
    garlic
  • 1
    small chilli (to your taste)
 

Method

20 mins
 
Preheat the oven to 180 ºC.
Put on the rice and follow the packet instructions.
Slice the chicken into strips.
Slice the onion, chop the chilli and grate the garlic on the smallest eye.
Slice the red pepper and the baby marrows into fingers.
Pan-fry the onion in a little vegetable/canola oil until soft, adding the garlic and chilli.
Add the veggies and the chicken and stir-fry for a minute or 2.
Add the tin of tomato and let it simmer for 5-10 mins.
Season with black pepper, salt and a pinch of sugar.
Add the chopped basil at the end.
Toast the pitas in the oven for about 3 mins.
Mix the rice into the chicken mixture and stuff the pitas.

Tasty alternatives!

1.       Add some goats cheese for a bit of extra flavour and creaminess.

2.       Leave out the rice and serve with a salad to lighten the dish.
