Hot chicken liver salad

    ml
    butter
  • 50
    ml
    olive oil
  • 500
    g
    chicken livers, halved
  • 15
    ml
    brown grape vinegar
  • 5
    ml
    mustard powder
  • 50
    ml
    brandy
  • salt and black pepper
  • lettuce leaves or fresh herbs to garnish
 

Method

 
Heat the butter and olive oil in a pan. Add the chicken livers and fry until brown on the outside but still slightly pink inside. Add the vinegar, mustard powder and brandy and stir-fry for about another minute. Serve on four side plates and garnish with fresh lettuce leaves or sprigs of fresh herbs. Serves 4.
