Preheat the oven to 180 ºC (350 ºF). Spray a pie dish with non-stick spray or butter well. Sift the cake flour, salt and baking powder in a mixing bowl. Add the sugar and mix. Rub in the butter until the mixture resembles breadcrumbs. Beat together the eggs, milk and vanilla essence. Add to the dry ingredients, mixing to form a slack batter. Spoon half the batter into the prepared pie dish. Arrange the apple pieces on top, sprinkle with the sultanas (soaked in the sherry) and spoon over the remaining batter. Bake for 45 minutes or until done and brown on top. Serve lukewarm with custard. Serves 6-8.
