    icing sugar

    vanilla essence

    lemon rind, grated
  • 1
    egg, beaten
  • 480
    g
    cake flour
  • pinch salt
  • ICING
  • 100
    g
    marmalade
  • 200
    g
    dark chocolate
 

Method

 
Preheat the oven to 150 ºC (300 ºF). Cream the butter and icing sugar together. Add the vanilla essence, lemon rind and egg, and blend well. Sift the cake flour and salt together and add to the butter mixture. Blend well and place in a piping bag. Pipe horseshoe shapes on a baking sheet and bake for about 15 minutes or until the biscuits are straw coloured. Cool completely. Spread half the biscuits with marmalade and sandwich together with the remaining biscuits. Melt the chocolate and dip one end of each horseshoe in the melted chocolate. (Allow the chocolate to cool completely before storing, otherwise the biscuits will stick together). Makes about 30 biscuits.
