Honeyed lean pork chops

    sunflower oil

    sesame oil

    minced fresh ginger
  • 5

    each ground coriander and cumin

    honey
  • 60
    ml
    soy sauce
  • 1
    orange (juice only)

    lemon (juice only)
  • salt and pepper

    lean pork chops
  • BEAN MASH

    butter beans
  • olive oil
  • garlic, crushed
 

Method

 
In a bowl, mix the oils, ginger, spices, honey, soy sauce, citrus juices and seasoning. Pour over the chops and leave to marinate for about 15 to 30 minutes. Place 2 tablespoonfuls of the marinade in a large frying pan and heat until bubbling. Add the chops and cook over high heat for 4 to 5 minutes, or until done, adding a little extra marinade if chops start to burn. Remove chops from the pan and cover with foil to keep warm. Add remaining marinade to the pan and cook over high heat to reduce and slightly thicken. Meanwhile, heat beans with a little olive oil and garlic. When hot, mash coarsely with a fork. Serve immediately with pork chops, reduced marinade and steamed pak-choi. Per portion: 1 250 kJ; 25 g carbohydrate; 19 g protein; 14 g fat
