FRIED RICE
750.00 ml rice — cooked
1.00 green pepper — deseeded and diced
1.00 garlic — cloves, crushed
5.00 ml fresh ginger — grated
prawns
oil — for frying
1.00 onion — sliced into rings
1.00 garlic — cloves, crushed
2.00 celery stalks — sliced into rings
125.00 g button mushrooms — sliced
60.00 g mangetout
10.00 baby carrots — baby, peeled, thinly sliced
750.00 g prawns — frozen
125.00 ml honey
15.00 ml soy sauce
15.00 ml sesame seeds

Method:

Preheat the oven to 200 ºC (400 ºF). Mix all the ingredients for the fried rice. Spray an oven pan with non-stick spray and spread the rice evenly in the pan. Bake for 15 minutes, uncovered, stirring occasionally. Set aside. Heat oil in a large pan and sauté the onion, garlic and celery until glossy. Add the mushrooms and stir-fry until lightly browned. Add the remaining vegetables and stir-fry for another minute. Pour boiling water over the prawns and leave until defrosted. Drain and add to the sautéed vegetables. Stir-fry rapidly for about 1-2 minutes or until done. Blend the honey and soy sauce, pour over the prawn mixture and mix. Sprinkle with sesame seeds and serve with the rice.
Serves 6-8.
