Honey and mustard kebabs

  • 9
    skinned and boned chicken breasts, cubed
  • 16
    fresh button mushrooms (optional)
  • extra coriander for serving
  • MARINADE
  • 2
    lemons, juice
  • 30
    ml
    wholegrain mustard
  • 45
    ml
    honey
  • 15
    ml
    mustard powder
  • 30
    ml
    chopped fresh coriander
 

Method

 
MARINADE: Mix all ingredients well. Thread cubed chicken and mushrooms on the skewers (see tips). Brush kebabs liberally with marinade. Preheat grill. Grill kebabs for 4 minutes. Baste, turn and grill for a further 4 minutes. Repeat process, grilling for a further 2 to 3 minutes. Remove from oven, brush with remaining sauce and serve.
