Honey and lavender gravy

    duck's necks

    onions, chopped

    carrot, chopped
  • 1
    celery stalk, chopped
  • 1
    bay leaf
  • 375
    ml
    white wine
  • 3
    Litres
    cold water
  • 250
    ml
    orange juice
  • 30
    ml
    honey
  • 3
    sprigs lavender
 

Method

 
Place wings, necks, vegetables and bay leaf in a roasting pan. Leave in a 180 ºC oven for about 1 hour. Add white wine, stir and pour into a stock pot. Add water and bring to boil. Reduce heat and simmer gently for 4 hours. Strain and reduce to 1 litre by brisk boiling, uncovered. Add orange juice, honey and lavender. Boil for 5 minutes and serve in a heated gravy boat.
