Ingredients (12)

8.00 chicken — wings
4.00 chicken — necks
2.00 duck — necks
2.00 onion — chopped
1.00 carrots — sliced
1.00 celery stalks — chopped
1.00 bay leaves
375.00 ml wine — white
3.00 Litres water — cold
250.00 ml orange juice
30.00 ml honey
3.00 fresh lavender — sprigs

Method:

Place wings, necks, vegetables and bay leaf in a roasting pan. Leave in a 180 ºC oven for about 1 hour.
Add white wine, stir and pour into a stock pot. Add water and bring to boil.
Reduce heat and simmer gently for 4 hours. Strain and reduce to 1 litre by brisk boiling, uncovered.
Add orange juice, honey and lavender. Boil for 5 minutes and serve in a heated gravy boat.
