Ingredients (9)

50.00 g butter — cold, diced
40.00 ml honey
80.00 ml brown sugar
60.00 ml flour — cake
2.00 ml vanilla — extract
5.00 ml vanilla — essence
2.00 eggs — white
125.00 ml almonds — blanched, toasted and chopped
125.00 ml dark chocolate — roughly chopped

Method:

Preheat the oven to 180°C. Line 2 baking sheets with baking paper and grease with nonstick spray.

Melt the butter and honey in a small saucepan over low heat. Place the sugar, flour, vanilla and egg whites in a mixing bowl, add the butter mixture and beat until the mixture is smooth.

Spoon 2 teaspoonfuls of the mixture onto a prepared baking sheet, spreading it thinly to form an 8 cm circle. Sprinkle with the nuts and chocolate.

Repeat with the remaining mixture and bake for 8-10 minutes or until golden brown.
