    cold butter, diced
  • 40

    honey
  • 80
    ml
    brown sugar
  • 60
    ml
    cake flour
  • 2
    ml
    vanilla extract
  • 5
    ml
    OR vanilla essence
  • 2
    egg whites
  • 125
    ml
    blanched almonds, toasted and roughly chopped
  • 125
    ml
    dark chocolate, roughly chopped

Preheat the oven to 180°C. Line 2 baking sheets with baking paper and grease with nonstick spray.

Melt the butter and honey in a small saucepan over low heat. Place the sugar, flour, vanilla and egg whites in a mixing bowl, add the butter mixture and beat until the mixture is smooth.

Spoon 2 teaspoonfuls of the mixture onto a prepared baking sheet, spreading it thinly to form an 8 cm circle. Sprinkle with the nuts and chocolate.

Repeat with the remaining mixture and bake for 8-10 minutes or until golden brown.
