    butter or margarine

    sugar

    bicarbonate of soda
  • 1000
    ml
    milk
  • 4
    eggs
  • 60
    ml
    cake flour
  • 60
    ml
    smooth apricot jam
  • 100
    ml
    cream, custard or ice cream to serve
 

Method

Preheat the oven to 180 °C and grease an ovenproof dish.

Cream together the butter or margarine and sugar. Dissolve the bicarbonate of soda in 50 ml of the milk.

Add to the butter mixture along with the remaining ingredients and beat well.

Turn the batter into the prepared dish and bake for about 60 minutes or until dark brown (the pudding is at its best well browned).

Serve hot with cream, custard or ice cream.
