60.00 ml butter — or margerine
250.00 ml sugar
5.00 ml Bicarbonate of soda
1000.00 ml milk
4.00 eggs
60.00 ml flour — cake
60.00 ml jam — smooth, apricot
100.00 ml cream — or custard or ice cream, to serve

Method:

Preheat the oven to 180 °C and
grease an ovenproof dish.


Cream together the butter or
margarine and sugar. Dissolve the
bicarbonate of soda in 50 ml of the
milk.


Add to the butter mixture along
with the remaining ingredients and
beat well.

Turn the batter into the prepared
dish and bake for about 60 minutes
or until dark brown (the pudding is
at its best well browned).


Serve hot with cream, custard or
ice cream.
