Honey-Brandy chicken salad

  • 4
    chicken breasts, diced
  • 2
    Tbs
    sunflower oil
  • 4
    Tbs
    cornflour
  • 3
    Tbs
    honey
  • 2
    Tbs
    sesame seeds
  • 125
    ml
    brandy
  • 1
    head of lettuce
  • 1
    handful
    corinader
  • 1
    yellow pepper
  • 1
    red pepper
 

Method

1. Coat the chunks of chicken in cornflour.

2. Heat the oil in a saucepan and brown the chicken on all sides, until cooked through and golden.

3. Add the honey and sesame seeds. Once the honey starts to caramelise, add the brandy and allow to simmer for two or three minutes. Remove the chicken from the heat and serve on a bed of lettuce and coriander leaves. Garnish with chunks of red and yellow pepper.
