Homemade pesto for your pasta

Ingredients 10

Minutes 15 minutes
  • 1 large handful of fresh basil
  • 1 thumb of fresh ginger, peeled and chopped roughly
  • 2 medium sized garlic cloves
  • 1 chilli, or to your taste
  • Juice of 1 lemon
  • 1 t brown sugar
  • 100g roasted cashew nuts
  • 1 small handful of grated parmesan
  • 50-75ml good extra virgin olive oil
  • Salt and black pepper to taste


15 minutes
Whizz all the ingredients in a blender and season to taste. You can add more chillis for fire, ginger for freshness or lemon for tartness and of course more garlic if you want to ward away all those pesky (but sexy) vampires.

It's fun to play around and tweak it to your palate or the dish you want to serve it with.
