Homemade sandwich spread

    butter
  • 5
    ml
    crushed garlic
  • 2
    large onions, very finely chopped
  • 2
    medium-sized carrots, very finely grated
  • 500
    ml
    finely shredded cabbage
  • 5
    ml
    soy sauce (optional)
  • 1
    ml
    dried mixed herbs
  • salt and coarsely ground black pepper
  • 190
    ml
    finely grated English cucumber
  • 5
    ml
    white grape vinegar
  • 400
    ml
    low-fat mayonnaise
  • 5
    ml
    lemon juice
 

Method

 
Melt the butter in a medium-sized saucepan and slowly sauté the garlic, onions, carrots and cabbage over medium heat for 1 minute. Add the soy sauce, herbs and salt and pepper to taste and sauté slowly for 5 minutes. Leave on the stove plate and add the cucumber. Cover and leave on the hot stove plate for 2 minutes. Stir and leave to cool. Add the remaining ingredients to the vegetables and mix. Spoon into sterilised jars and store in the fridge. Makes about 1 litre sandwich spread.
