Ingredients (8)

22.00 ml Sheridans gelatine
250.00 ml water — boiled
750.00 ml sugar
330.00 ml liquid glucose
160.00 ml water
15.00 ml vanilla — extract
500.00 ml icing sugar
80.00 ml cornflour

Method:

The kids will love whipping up big bowls of this fluffy mixture and cutting out shapes with star cookie cutters. Pack them in tissue paper and tie with ribbon.
Place the gelatine and boiling water in the bowl of an electric mixer and set aside.
Place the sugar, glucose and extra water in a saucepan over medium-high heat and boil without stirring until soft-ball stage on a sugar thermometer.
With the mixer running at high speed, slowly add the hot syrup to the gelatine mixture.
Add vanilla extract and beat for 12 to 15 minutes or until the mixture is thick and fluffy.
Pour the mixture into a lightly greased baking tray lined with non-stick paper. Cover and refrigerate overnight.
Sieve together the icing sugar and cornflour.
Lightly dust a clean surface with the icing sugar and cornflour mixture and turn out the marshmallow onto this surface.
Cut out shapes with cookie cutters and dust with icing sugar and cornflour mixture.
Store in an airtight container.
