Homemade lemon curd

Ingredients

  • 200
    ml
    castor sugar
  • 125
    ml
    freshly squeezed lemon juice
  • 50
    g
    butter
  • 2
    egg yolks
  • 15
    ml
    cornflour
  • 2
    lemons, the zest
 

Method

20 minutes
 
Heat castor sugar, freshly squeezed lemon juice and butter over a low heat.
Whisk in the egg yolks and cornflour.
Stir constantly over a low heat until thickened.
Stir in the lemon zest and allow to cool.
Spoon into a sterilised bottle and refrigerate until ready to use.
You could also make lime or orange curd by substituting fresh lime or orange juice for the lemon juice.
