Preheat oven to 90 ºC.
Soak mushrooms in a bowl of tepid, well-salted water. Drain and place on a dry kitchen towel.
Lightly oil a large baking sheet and spread the mushrooms out in a single layer, (the mushrooms may be sliced if desired).
Place in the centre of the oven and leave to dry out, tossing the mushrooms every 10 to 15 minutes.
After 30 minutes, drizzle 65 ml olive oil over the mushrooms so the are well coated. Return to the oven and continue drying until mushrooms are shrivelled. Leave to cool.
