Ingredients (6)

250.00 g marshmallows
115.00 g butter
10.00 ml Food colouring — green
5.00 ml vanilla — essence
1.00 Litres cornflakes
chocolate — Smarties

Method:

Grease a sheet of greaseproof paper with butter or margarine. Place the marshmallows and butter in a large saucepan. Melt over low heat, stirring continuously with a wooden spoon. Carefully remove the saucepan from the stove, using oven gloves. Add the food colouring and vanilla essence and mix. Add the cornflakes to the marshmallow mixture and stir carefully until they are completely covered. Try to do this as quickly as possible and without crushing the cornflakes. Grease a clean spoon with butter. Scoop spoonfuls of the mixture onto the greaseproof paper. (Grease your fingers with butter if you prefer to use your hands to shape the cookies). If the mixture becomes too hard to handle, place it on the stove again and heat briefly. Place a Smartie in the middle of each cookie.
Makes about 20 cookies.
