Hoisin pork chops with pineapple relish

Ingredients (14)

8.00 pork chops
HOISIN MARINADE
250.00 ml hoisin sauce
45.00 ml vinegar — rice wine
30.00 ml soy sauce
4.00 garlic — cloves, crushed
5.00 ml sesame oil
freshly ground black pepper
PINEAPPLE RELISH
500.00 ml pineapple — diced
1.00 red chillies — small, deseeded and chopped
30.00 ml fresh lime juice — or lemon juice
30.00 ml fresh coriander — chopped
2.00 spring onions
olive oil — cooking spray
salt and freshly ground black pepper

Method:

The day before:

Whisk all the ingredients for the marinade in a large, shallow baking dish. Add pork chops and turn to coat both sides. Cover with cling film and refrigerate until ready to use.

To prepare the pineapple relish, combine pineapple, chilli, lime juice and coriander. Toss gently and refrigerate until ready to use.

On the night:

Remove chops from marinade (discard marinade) and grill for 6 to 7 minutes per side for medium to well-done meat. While the chops are grilling, spray spring onions with olive oil spray and season with salt and pepper. Grill until just golden, about 4 minutes. Remove from grill and slice. Add to pineapple relish. Serve with grilled chops.
