Herby mustard champ

    g
    unsalted butter
  • 3
    bunches spring onions
  • 200
    ml
    cream, warmed
  • 900
    g
    potatoes, washed, peeled and cooked
  • 15
    ml
    Dijon mustard
  • 15
    ml
    wholegrain mustard
  • 45
    ml
    Italian parsley, chopped
  • salt, to taste
 

Method

 
Melt the butter in a saucepan and cook the spring onions for five minutes.
Add the cream and cook for a few more minutes.
Mash the potatoes and combine with the onion-and-cream mixture.
Add the mustards, parsley and salt.
It should be a bit sloppy, so add a little milk if you need to.
Give everyone a large helping of this traditional Irish potato dish, make a hole in the centre and put in a lump of butter.
Eat from the outside, dipping each mouthful into the melting butter.
