Herby cheese bites

    slices brown bread, crusts removed
  • 250
    g
    fat-free smooth cottage cheese
  • 250
    g
    strong Cheddar cheese, grated
  • 30
    ml
    strong English mustard
  • 90
    ml
    finely chopped parsley
  • 30
    ml
    dried dill
  • 1
    bunch spring onions
 

Method

 
Toast the slices of bread on one side only under the oven grill.
Quarter each slice.
Blend the remaining ingredients, reserving a third of the cheese and spring onions for garnishing.
Spread the untoasted sides of each slice with the mixture.
Place them on a baking sheet and sprinkle with the remaining cheese and spring onions.
Grill for a few minutes or until the cheese mixture just begins to bubble.
Garnish with chunks of oven-raosted beetroot.
Serve immediately.
Makes 40 bites.
