10.00 bread — crustless brown slices
250.00 g cottage cheese — fat-free, smooth
250.00 g cheddar cheese — strong, grated
30.00 ml english mustard — strong
90.00 ml fresh parsley — chopped
30.00 ml dried dill
1.00 spring onions — a bunch

Method:

Toast the slices of bread on one side only under the oven grill.
Quarter each slice.
Blend the remaining ingredients, reserving a third of the cheese and spring onions for garnishing.
Spread the untoasted sides of each slice with the mixture.
Place them on a baking sheet and sprinkle with the remaining cheese and spring onions.
Grill for a few minutes or until the cheese mixture just begins to bubble.
Garnish with chunks of oven-raosted beetroot.
Serve immediately.
Makes 40 bites.
