Herbed rice salad

Ingredients

  • HERB DRESSING
  • 40
    ml
    fresh mint, chopped
  • 40
    ml
    fresh parsley, chopped
  • 10
    ml
    fresh coriander, chopped (optional)
  • 4
    garlic cloves, crushed
  • 1
    5 cm piece fresh ginger, grated
  • 100
    ml
    soya sauce
  • 4
    lemons (the juice)
  • 60
    ml
    honey (you may want to use more)
  • 150
    ml
    olive oil
  • SALAD
  • 500
    g
    white rice (jasmine flavour)
  • bunch of spring onions, chopped
 

Method

 
Dressing
Mix all the ingredients and set aside.
Salad
Cook the rice in boiling salted water until just done. Drain and rinse.
Add the salad dressing to the hot rice and leave to cool.
Add the spring onions and stir.
Hint
Make double the quantity of salad dressing and use it on the Lentil and bean salad (see recipe).
