Herbed potatoes

    large potatoes
  • 1
    large onion, sliced
  • 2
    cloves garlic, crushed
  • 250

    button mushrooms, sliced
  • 60
    ml
    chopped fresh herbs such as parsley or spring onion
  • 1
    ml
    dried thyme
  • black pepper, freshly ground
 

Method

 
Scrub the potatoes and boil in salted water until nearly done. Skin while hot and cut into fairly large cubes. Sauté the onion and garlic in a little oil until soft. Add the mushrooms. Stir-fry until pale brown. Remove from the pan and set aside. Fry the potato cubes in extra oil until golden brown. Add the fresh herbs and the sautéed vegetables. Season with thyme and black pepper. Stir-fry until heated through. Serve hot.
