Herbed potato chunks with lean bacon

    large potatoes
  • sea salt and milled pepper
  • 1
    stem fresh rosemary or 6 sage leaves
  • 65
    ml
    olive or canola oil
  • 250
    g
    lean bacon
 

Method

 
Preheat oven to 200 ºC.
Cut potatoes into bite-sized cubes, place in a pot of water, cover and bring to the boil.
Boil for three minutes, until just cooked. Do not overcook. Drain well.
Place potatoes in a suitable ovenproof dish or on a baking tray. Season, add herbs and drizzle with olive oil.
Toss in bacon bits and roast for about 20 minutes or until the bacon and potatoes are crisp and golden.
For a more golden look, cook potatoes under the grill for a few minutes. Serve with grilled tomatoes and poached eggs.
