Herbed pancakes with bacon and brie

    self-raising flour

    bicarbonate of soda
  • 5
    ml
    salt
  • 45
    ml
    butter, melted
  • 375
    ml
    buttermilk
  • 1
    egg
  • 45
    ml
    fresh mixed herbs, chopped
  • 200
    g
    bacon, fried until crisp
  • 125
    g
    brie cheese, sliced (or more as needed)
 

Method

 
Place flour, bicarbonate of soda and salt in a bowl and mix to combine. Place butter, buttermilk and egg in a separate bowl and whisk well. Add to flour mixture. Stir until smooth, then mix in herbs. Heat a well-greased frying pan, drop spoonfuls of mixture into it and cook for 1 minute on each side, or until pancakes are golden. Stack pancakes in threes on a serving plate. Top each stack with bacon and cheese. Grill for 1 minute, or until cheese melts. Serve immediately.
