Herbed pancakes with bacon and brie

Ingredients (9)

250.00 ml flour — self-raising
5.00 ml Bicarbonate of soda
5.00 ml salt
45.00 ml butter — melted
375.00 ml Buttermilk
1.00 eggs
45.00 ml fresh mixed herbs — chopped
200.00 g bacon — fried
125.00 g brie cheese — sliced

Method:

Place flour, bicarbonate of soda and salt in a bowl and mix to combine.
Place butter, buttermilk and egg in a separate bowl and whisk well. Add to flour mixture. Stir until smooth, then mix in herbs.
Heat a well-greased frying pan, drop spoonfuls of mixture into it and cook for 1 minute on each side, or until pancakes are golden.
Stack pancakes in threes on a serving plate.
Top each stack with bacon and cheese. Grill for 1 minute, or until cheese melts. Serve immediately.
