Herbed kofta with spice tomato sauce

    chilli, seeded and cut into strips

  • small handful of parsley, stalks removed

  • SPICY TOMATO SAUCE

    chopped tomatoes

    chillies, seeded and finely chopped
  • 30

    olive oil
  • 15
    ml
    castor sugar
  • 5
    ml
    dried origanum
  • 2
    ml
    salt and milled black pepper
  • 15
    ml
    balsamic vinegar
  • small handful coriander leaves
  • 30
    ml
    tomato sauce
 

Method

 
Place onion, garlic and chilli in a food processor and process to a paste. Add egg, cumin, parsley and 5 ml each salt and pepper, and process again to blend well. Add meat and process together to a roughish paste. Roll into small balls and fry in olive oil over medium heat until evenly browned. Serve with spicy tomato sauce. Alternatively, serve the meatballs on their own and keep the sauce separate for dipping. SPICY TOMATO SAUCE: Combine all ingredients, except coriander and tomato sauce, and simmer for 20 minutes until thick. Add coriander and tomato sauce, and allow to simmer gently for 5 minutes until cooked through.
