Herbed chicken breasts

    chicken breast fillets
  • strong chicken stock to cover
  • celery leaves
  • 1
    onion
  • black peppercorns
  • 1
    bay leaf
  • Sauce
  • 150
    ml
    thick Bulgarian yoghurt
  • 150
    ml
    sour cream
  • 15
    ml
    mayonnaise
  • 15
    ml
    lemon juice
  • 2
    cloves garlic
  • bunch chives, dill or basil
  • 1
    bunch parsley
  • 2
    ml
    mustard powder
  • salt and milled pepper
 

Method

 
Arrange breasts in a large pan, pour over chicken stock, add celery leaves, onion, peppercorns and bay leaf, cover and bring to a gentle simmer.
Simmer for about 10 to 12 minutes, until just cooked through.
Remove from heat and, if time allows, cool in broth. Remove and chill.
Meanwhile, mix sauce ingredients together. Slice breasts, pour over sauce and decorate with lemon wedges, watercress and salad leaves.
