  • HERB FILLING
  • 125
    ml
    freshly chopped herbs such as chives, origanum, thyme, sage and parsley
  • 2
    cloves garlic, crushed
  • 50
    g
    ground almonds
  • 50
    g
    Parmesan cheese
  • 150
    ml
    olive oil
  • black pepper to taste
  • 2
    quantities basic scone dough
 

Method

 
Place all the filling ingredients in the food processor and chop finely to form a paste. Preheat the oven to 200 ºC (400 ºF). Spray a baking sheet with non-stick spray. Prepare the scone dough as described in the basic scone recipe. On a floured surface, roll out the dough into a rectangle about 1 cm thick. Spread with the herb mixture until completely covered and roll up lengthwise. Place on the greased baking sheet. Bake for about 20 minutes or until done and golden brown on top. Serve with leftover herb mixture.
