Herb pears and prunes

Ingredients

  • 500
    g
    prunes
  • water
  • 4
    pears, skinned, cored and cut into pieces
  • 450
    ml
    apple cider
  • 565
    ml
    sugar
  • 1
    lemon (grated rind only)
  • 2
    whole cloves
  • 5
    ml
    allspice
  • small piece fresh ginger
  • 1
    piece stick cinnamon
 

Method

 
Cover the prunes with water and soak overnight. Place the remaining ingredients in a saucepan (preferably stainless steel) and heat until the sugar has dissolved. Stir every now and then. Drain the prunes and add them to the mixture. Bring to the boil and simmer for about 15-20 minutes or until the pears are soft but still whole. Spoon into sterilised bottles and seal. Store for 3 weeks before serving. Makes 1,3 litres.
