Herb dumplings

    g
    self-raising flour
  • 60
    g
    digestive bran
  • 60
    g
    butter
  • 15
    ml
    finely chopped fresh herbs of your choice
  • 10
    ml
    finely grated lemon rind
  • salt
  • freshly ground pepper
  • 2
    eggs
 

Method

 
Place the flour, bran, butter, herbs and lemon rind in a large bowl. Mix well with a fork or wooden spoon. Season with salt and pepper, and blend in the egg mixture.
Use lightly floured hands to shape the mixture into balls. Poach the dumplings in a large saucepan of boiling salted water. (They will rise to the surface when they are cooked through, after about 15 minutes.) Serve with any casserole.
