Herb butter sauce

    ml
    cold water
  • 45
    ml
    each tarragon and flat-leaf parsley, chopped
  • 200
    g
    butter, chilled and diced
  • 5
    ml
    lemon juice (or more to taste)
  • salt and milled black pepper
 

Method

 
Place water and herbs in a saucepan and bring to boil. Over very low heat, add butter, whisking continuously. At the last moment, add lemon juice, season to taste with salt and pepper and pour sauce through a wire-mesh sieve. Serve immediately.
