Herb and butter basted turkey

    block PnP butter (250g)
  • ¼
    PnP fresh rosemary - chopped
  • ¼
    PnP thyme - chopped
  • ¼
    PnP fresh sage - chopped
  • 3
    fat garlic cloves - finely crushed
  • 2
    grated peel of lemon
  • 2
    PnP lemons - quartered
  • 1
    dash PnP salt - milled
  • 1
    dash pnp black pepper - milled
  • 1
    turkey (about 4-5kg) giblets removed


Mix together butter ingredients and add a squeeze of lemon juice.

Rub turkey with butter mixture inside and out.

Stuff cavity with lemons and truss turkey’s legs together.

Place in a roasting pan and cover with foil.

Roast for 90 minutes, uncover and roast for a further 60-90 minutes, basting frequently with pan juices until cooked through and golden.
