Herb and butter basted turkey

Ingredients (10)

1 butter
¼ cup fresh rosemary — chopped
¼ cup fresh thyme leaves — chopped
¼ cup fresh sage — chopped
3 garlic — cloves, crushed
2 lemons — grated peel
2 lemons — quartered
1 salt
1 freshly ground black pepper
1 turkey

Method:

Mix together butter ingredients and add a squeeze of lemon juice.

Rub turkey with butter mixture inside and out.

Stuff cavity with lemons and truss turkey’s legs together.

Place in a roasting pan and cover with foil.

Roast for 90 minutes, uncover and roast for a further 60-90 minutes, basting frequently with pan juices until cooked through and golden.
