Ingredients (20)

30.00 ml fresh chillies — 573
15.00 ml butter
2.00 kg lamb — knuckles
5.00 ml salt
freshly ground black pepper
15.00 ml mustard — powder
30.00 g flour — for dusting
2.00 onion — diced
5.00 ml garlic — cloves, crushed
5.00 tomatoes — sliced
4.00 carrots — sliced
2.00 turnips — sliced
3.00 potatoes — sliced
250.00 ml wine — white
250.00 ml water — cold
BOUQUET GARNI
4.00 fresh lemon thyme — or thyme, sprigs
4.00 fresh parsley
2.00 celery — soup, sprigs
2.00 bay leaves
2.00 orange peel — strips with pith removed

Method:

1. Heat olive oil and butter in a frying pan until hot but not smoking. Add lamb knuckles, a few pieces at a time. Don’t overcrowd pan. Brown on all sides to seal in juices.
2. Season knuckles with salt, pepper and mustard.
3. Sprinkle browned lamb pieces with flour and toss lightly to make sure they are coated. Transfer to a casserole dish.
4. Add onions, garlic, tomatoes, carrots, turnips and potatoes to casserole dish. Tie bouquet garni ingredients together and add to casserole.
5. Heat white wine in a small saucepan until boiling and boil for a few moments to evaporate alcohol. Add to casserole dish with cold water.
6. Cover casserole dish first with aluminium foil and then with lid. Bake in the oven at 160 ºC for 3 to 4 hours, or until lamb knuckles are tender.
7. Remove lid of casserole dish and, if necessary, remove any fat on surface use a large spoon to scoop up fat or place a sheet of absorbent paper on top and let it soak up any excess fat. Taste gravy and add extra salt and pepper if necessary.
