Ingredients (13)

700.00 g beef — shin
250.00 ml red speckled beans
250.00 ml soup — mix
2.00 Litres water
15.00 ml olive oil — or sunflower oil
1.00 onion — finely chopped
1.00 cabbage — shredded
3.00 leeks — sliced
5.00 carrots — grated
10.00 ml dried thyme
10.00 ml mustard — powder
0.00 salt and freshly ground black pepper
410.00 g butter beans — tinned, drained

Method:

Place shin, red speckled beans, soup mix and water in a large pot, and bring to the boil for an hour, or until beans are soft. In a saucepan, heat oil, add remaining ingredients except butter beans. Sauté for a minute or two.

Add vegetables to stock and bring to the boil for 10 minutes, checking seasoning. Serve in bowls with fresh corn bread.
