Ingredients (12)

30.00 g butter — or margerine
0.00 fresh chives — bunch, finely chopped
1.00 onion — finely chopped
2.00 garlic — cloves, crushed
2.00 Litres stock
250.00 ml split peas — soaked
1.00 potatoes — peeled and diced
1.00 tomatoes — large, peeled and diced
1.00 celery stalks — sliced
2.00 carrots — sliced
15.00 ml fresh parsley — chopped
0.00 salt and freshly ground black pepper — to taste

Method:

1.In a deep soup pot, melt butter and sauté chives, onions and
garlic. Add chicken stock and peas (with the water that the peas
were soaked in).
2.Bring to the boil. Reduce heat and simmer, adding more water
if needed. Cook peas until tender.
3.Add all remaining ingredients, continue cooking for 20 minutes
until peas and vegetables are tender, purée soup in a blender or
rub through sieve until smooth.
4.Pour back into saucepan and heat through. Season to taste and
garnish with croutons, fresh cream and chopped parsley.
5. Serve hot with mini pita bread.
